| 2 wheels Hudson Valley Camembert |

| 1/2 cup all-purpose flour |
 |

| 2 fresh eggs, beaten |
 |

| 1 cup cornflake crumbs |
 |

| 1 pint strawberries |
 |
 |
 |
| 16 slices French bread |
 |
 |
 |
| 2 ounces butter |
 |
 |
 |
| Olive oil, for shallow frying |

Begin by preparing a standard breading system. Arrange the flour, beaten eggs, and crumbs in separate containers side-by-side. Proceed by coating the cheese wheels lightly with flour, then egg, and finally the cornflake crumbs. Be sure to complete a solid crust so that the cheese will not leak through. Chill in the refrigerator for 10 minutes.
Meanwhile, preheat the olive oil to 350F for shallow frying in a large skillet. In a separate pan, lightly toast the French bread with the butter. Fry the Camembert directly from the refrigerator until golden brown on the outside. If the center does not get warm and soften, finish for a few minutes in a 300-degree oven. Serve with toast and fresh berries.
