Great Hill Blue Cheese and Onion Focaccia

Great Hill Blue is one of the great New England cheeses. Here it is used as a topping on classic Italian focaccia bread.
INGREDIENTS
20-25 minutes serves 6
1 tablespoon butter
1 very large Spanish onion, sliced julienne
1/2 teaspoon rubbed sage
Salt and pepper, to taste
1 loaf focaccia bread
8 ounces Great Hill Blue cheese
1Melt the butter in a sauté pan over medium heat, and sauté the onions until translucent. Reduce the heat and continue to cook the onions until they caramelize. Season the onions to taste with the sage, salt and pepper.

1 Split the focaccia horizontally if necessary, and proceed to top it with the onions and crumbled Great Hill Blue cheese. Heat in the oven or under a broiler to lightly melt the cheese.
