Crucolo Crostini with Warm Apple Compote

Crostini is usually served as an appetizer, but here it is in dessert form, pairing a savory cheese with tart apples.
INGREDIENTS
20 minutes serves 8
2 tart apples, cut into 1/2-inch dice
1 teaspoon lemon juice
1/3 cup light brown sugar
1/2 cup water or apple juice
1/2 teaspoon cinnamon
1 teaspoon cornstarch
8 thin slices Italian bread
2 tablespoons butter
8 ounces Crucolo cheese
1Combine the apples and all of the compote ingredients (lemon juice, brown sugar, water, cinnamon and cornstarch) in a small saucepan. Bring to a boil and reduce to a medium-low heat. Simmer until the apples soften and the liquid becomes thickened.

1 Allow the compote to cool slightly before making the crostini.

1 Brush the bread slices lightly with the butter and toast them on both sides, either in a skillet over medium heat, or in a toaster/toaster oven. Place a slice of cheese on each crostini and top with the warm compote.
